
Started in 2024, this program brings together, farmers, ranchers, doctors, nutritionists, food system experts, and advocates to learn how we can prevent disease, and create paradigm shifts in our health care and agricultural communities. In 2025, we held a national event with more than 200 participants in Edmond, Oklahoma. Previous programs were held in Tulsa, Oklahoma, and Longmont, Colorado.

Does regenerative agriculture support human health outcomes? Yes! Dr. Jonathan Lundgren founded Ecdysis Foundation & Blue Dasher Farm as a research foundation as well as training ground for future scientists and farmers. He currently runs a study of 1,000 farms across the United States that are moving toward regenerative outcomes. He is an agroecologist, farmer, rancher, and beekeeper.
When Herb Young purchased a Georgia farm after a 40-year career in the chemical industry, he had no idea what was about to hit him. Getting his hands in the dirt taught him that that the true foundation of sustainable agriculture lies in the soil’s microbial ecology. He now spends full time in the grove testing every idea that comes to mind and nursing trees into production.
Immersed in the regenerative food space, Sherry Hess has donned many hats within the industry--from spice blend manufacturing, restaurant management, Executive Chef and product development for Oncobitez nutrition bites. Her on stage talks (including Tedx) and presentations evoke personal curiosity and self empowerment by revealing nature's connections between flavor, nutrients and humanity.
Featuring Erin Martin, FreshRx Oklahoma: Erin Martin founded FreshRx Oklahoma, one of the first prescription food pilot programs of its kind in the country. Dr. Chen is the Chief Medical Officer of Alameda County Recipe4Health, a nationally recognized Food as Medicine program prescribing regenerative and organic produce with health coaching to address chronic conditions and food insecurity. Dr. Jaclyn Lewis Albin, UT Southwestern: Dr. Albin serves as Director of Culinary Medicine and Associate Professor of Internal Medicine, Pediatrics and Public Health at UT Southwestern. She teaches nutrition and care innovation through hands-on cooking.

Dr. Casey Carr is a primary care physician in Idaho who places Food as Medicine at the center of her practice. As a Cornell graduate in Nutritional Sciences, she sought out farming experiences to reconnect with food before going to medical school. Believing quality health outcomes depend on quality food and soil, Dr. Casey melds her passions for nutrition, food, farming and medicine in her care for patients.

Dr. van Vliet’s research is performed at the nexus of agricultural and human health. He routinely collaborates with farmers, ecologists and agricultural scientists to study critical linkages between sustainable agriculture, the nutrient density of food and human health.

Dr. Chen is the Chief Medical Officer of Alameda County Recipe4Health, a nationally recognized Food as Medicine program prescribing regenerative and organic produce with health coaching to address chronic conditions and food insecurity. Active in state and federal policy, he has helped craft legislation and advised other countries, states and healthcare systems on Food as Medicine implementation efforts.
